Cienaga Creek Ranch Cinnamon Rolls
In saucepan, scald: 2 cups of milk, 6 T. butter. Set aside to cool
In medium mixing bowl, combine: 1/2 cup hot tap water (not too hot or you will kill the yeast), 1-1/2 T yeast, 1 T white sugar. Set aside until yeast begins to bubble.
In large mixing bowl combine: 1/2 cup white sugar, 2 tsp. salt , 3 eggs. Add the milk and yeast mixtures, stir well. Add 2 1/2 to 3 cups flour, one cup at a time, stirring well after each cup until you have a sticky dough. Allow to rise for 1-2 hours, stirring one or two times when the dough has risen to the top of the bowl.
Turn dough onto floured surface. Add enough flour (1-2 cups), kneading until you can handle the dough without it sticking to your hands. Roll into a rectangle.
Spread 1/4 cup melted butter over the rectangle of dough. Sprinkle 1/2 cup white sugar and 1 T. cinnamon on top of butter. Roll dough up along the long edge into a cylinder. Using a piece of thread, cut into 1 inch thick circles. Place into greased 9x13 baking dish. Place directly in cold oven, set to 350 degrees and bake for 45-50 minutes - OR - let rise for 1 hour, bake in preheated oven at 350 degrees for 30 minutes - OR - place directly in freezer to bake later (take out of freezer the night before to pop in preheated oven for 30 minutes the next morning).
Drizzle with icing: powdered sugar and water mixed until smooth.
